The Tanganyikan Trade Winds
To understand our food, you must trace the spice routes across the Indian Ocean. Centuries ago, Indian traders brought their native spices, techniques, and pots to the shores of East Africa.
As they settled in lands like Tanganyika (modern-day Tanzania) and Kenya, a beautiful culinary marriage occurred. Robust, fiery Indian masalas met the rich bounty of African ingredients: cassava, coconut, tropical chilies, and maize.
Our grandmother—Dilu—grew up immersed in this vibrant cross-cultural melting pot. Every meal she made carried the warmth of African hospitality wrapped in the complex soul of Indian home cooking.
Bringing the Heritage
to London
When our family migrated to the UK, the one thing that anchored us to our roots was Dilu's kitchen. It was the heart of our home—a sanctuary where the aroma of roasting cardamom, fresh coriander, and rich tomato gravies promised comfort.
Dilu’s Kitchen was born from a desire to share that exact comfort. We didn't want to create just another curry house; we wanted to honor the authentic *Indo-African* fusion that fed generations of our family.
From our legendary Chicken Karahi to the deep, slow-cooked indulgence of our Lamb Biryani, every dish is an ode to Dilu's original, handwritten recipes. No shortcuts. No artificial coloring. Just pure, unadulterated passion.
